Cách làm xíu mại ăn bánh mì ngon
Xíu mại mềm, vị ngọt tự nhiên từ thịt quyện lẫn củ quả, nước sốt sánh màu au đỏ hấp dẫn, ăn cùng bánh mì giòn là bữa ăn sáng đủ chất, được nhiều người yêu thích.
Nguyên liệu
- 400 gr thịt heo xay
- 100 gr mỡ lợn
- 4 quả cà chua
- 1 củ đậu (củ sắn miền Nam)
- 1 cái bánh mì
- – Advertisement –
1 củ hành tây - 1 lòng đỏ trứng gà
- Rau gia vị: Hành lá, rau mùi (ngò rí)
- Gia vị: Mắm, muối, đường, dầu hào, hạt nêm, tương cà, tương ớt, hành, tỏi
- Bột năng hoặc bột bắp
Cách làm
1. Sơ chế
- Mỡ phần luộc qua rồi thái nhỏ, trộn cùng thịt xay để tăng phần béo ngậy cho xíu mại mà không bị khô. Ướp hỗn hợp thịt với 1 muỗng cà phê nước mắm, 1/2 muỗng cà phê đường, 1/2 muỗng cà phê tiêu, 1/2 muỗng cà phê hạt nêm cho thấm vị.
- Củ đậu (củ sắn miền Nam) cắt nhỏ, đem hấp hoặc chần qua nước sôi vắt ráo nước.
- Cà chua khía đường chữ thập ở vỏ, chần qua nước sôi rồi bóc bỏ vỏ, băm nhỏ hoặc xay nhuyễn.
- Bánh mì nướng giòn, bóp vụn. Bánh mì vừa giúp cho xíu mại mềm hơn, vừa tạo độ kết dính khi vo viên.
- Hành tỏi băm nhỏ, hành lá rửa sạch, xắt nhỏ.
2. Tẩm ướp
- Cho vào âu lớn gồm thịt xay, củ đậu, vụn bánh mì, lòng đỏ trứng gà, 1/2 lượng hành lá xắt nhỏ cùng 1 muỗng canh dầu hào, 1 muỗng cà phê đường, 1/2 muỗng cà phê muối, 1/2 muỗng cà phê hạt nêm, 1/2 muỗng cà phê hạt tiêu trộn, quết đều cho dẻo. Bọc màng bọc thực phẩm để tủ lạnh 30 phút cho cứng, rồi lấy ra vo thành các viên xíu mịu tròn đều. Sau đó, đem hấp cách thủy 15 phút, giữ lại nước hấp.
3. Chế biến
- Phi thơm hành tỏi khô, trút cà chua xay cùng nước sốt hấp xíu mại vào. Thêm 2 muỗng canh tương cà, 2 muỗng canh tương ớt và nêm nếm gia vị lại cho vừa miệng, đun sôi. Trút phần xíu mại hấp vào nấu ở lửa vừa vài phút, đảo nhẹ tay cho sốt bám đều các mặt và thấm vị. Pha 1/2 muỗng canh bột bắp với chút nước rồi vừa đổ vào vừa khuấy nhẹ đều cho tới khi sánh lại là được. Tắt bếp, rắc thêm hành lá, ngò rí và múc ra thưởng thức.
Chú ý:
- Xíu mại là món ăn bắt nguồn từ Trung Quốc từ thế kỷ 14, nguyên bản được làm từ thịt cừu, bọc trong lớp bột mỏng rồi hấp, ăn kèm rau. Sau đó lan tỏa sang nhiều quốc gia với các biến thể khác nhau từ thịt lợn, bò, tôm và nguyên liệu bản địa.
- Ở Việt Nam, xíu mại cũng được biến tấu theo phong vị từng vùng miền: Xíu mại phổ biến là thịt lợn trộn cùng rau củ quả rồi vo viên, hấp, rưới lên nước sốt sệt từ cà chua đỏ au. Ngoài ra còn có xíu mại Đà Lạt, xíu mại trứng cút, xíu mại trứng muối đều rất ngon.
